Our Philosophy

We are not trying to be the biggest. We’re here to be the most precise. The most complex and characterful. The most thoughtful. Eydent is a distillery built to challenge convention and push flavour forward, using heritage grains, modern science, and obsessive attention to every single variable in the process. We will craft whisky designed explicitly for flavour, with nothing left to chance.

We will never produce at scale. Every drop is meant to be exceptional.

Jack Mayo

Master Distiller & Operations Director
With a PhD in Astrophysics and a Masters in Brewing and Distilling, Jack has run major operations and now consults globally on cutting-edge distillery design. His technical precision defines everything we do.

Ollie Salvesen

Managing Director
Having trained at Bruichladdich and worked across Kilchoman, Glenkinchie, and Holyrood, Ollie brings outstanding operational and commercial insight. He’s also an experienced investor in spirits start-ups.

Our Location

We’ve found the perfect site in East Lothian, a region known for its barley, agricultural heritage, and proximity to Edinburgh. Housed in modern farm buildings, we’ve designed a sustainable, efficient and expandable site, with a full gin set-up in place, a bonded warehouse ready, and the whisky stills to follow.

This is a working distillery first, built for spirit, not tourists.
